The experimental educational enterprise affiliated with the University of Milan, known as the Antoniotto Guidobono Cavalchini experimental farm, is strategically situated on the border between the Apennines in Pavia and the lower Piedmont, at an altitude of 800 meters. This unique location offers an environment that is exceptionally well-suited for the breeding of Alpine chamois goats, a versatile and globally distributed breed that has found a home not only across Europe but also in various corners of the world. One of the primary distinctions of Alpine chamois goats lies in the exceptional quality of their milk. Their milk is renowned for its rich characteristics, rendering it a prime choice for the production of a variety of dairy products. This includes the crafting of delectable goat cheese, versatile fresh cheeses, and a selection of aged cheese varieties. Moreover, the site of the Antoniotto Guidobono Cavalchini farm is not merely limited to the production of high-quality milk from these Alpine chamois goats. In addition to the dairy pursuits, this location also serves as a hub for innovative experiments related to the breeding of goats for the production of luxurious wool, such as the prized cashmere.
